Mission

Ishoku-dougen (医食同源) is our motto. The term refers to preventing and treating illness through a well-balanced and healthy daily diet. The concept of Ishoku-dougen, originating in ancient Chinese medicine and coined by Japanese clinician Hirohisa Arai in 1972, focuses on diet as the basis for medical treatment. As medicine which cures illness and diet which promotes health are essentially the same, it is important to pay attention to our daily eating habits. 

At We Be Sushi, Ishoku-dougen is at the core of our menu. We strive not only to provide our customers with great hospitality and a pleasant dining experience, but also to promote their health and well-being through fresh, healthy ingredients.

34 years ago, I opened We Be Sushi with the hope that sushi would become a new addition to "American food". With this in mind, I had set my mission to serve "delicious and reasonably priced" sushi that everyone could enjoy

34 years later, I hold a new perspective. Sushi is now commonplace: in restaurants around the country, purchased pre-made at supermarkets, and made at home by DIY kits. In a way, my dream had come true.

In another way, the sushi I knew had changed and "America-fied". Three, four, five types of ingredients mixed with various sauces in one roll; a sushi-version of the famed Chinese-American dish, chop suey.

I now have a new mission to re-introduce Japanese food in a more traditional light and serve "authentic Japanese cuisine" that everyone can enjoy. Founded on my training at Hatsuhana restaurant in Japan, my goal is to focus on the core component of Japanese cooking: how to draw out the natural flavors of each ingredient. Grill, simmer, steam, boil, raw; each ingredient has its optimal preparation and serving method.

At We Be Sushi, we strive to have our customers take a step back from the eccentric sushi rolls they know (though fun and with great names) by serving authentic Japanese cuisine through which they may re-discover and enjoy the natural flavors of the ingredients.

Here at We Be Sushi, we aspire to reintroduce Japanese food in a more traditional light. Our goal is to focus on the core component of Japanese cooking: how to draw out the natural flavors of each ingredient. With the concept of "simple is best", our chefs prepare each ingredient through its optimal preparation and serving method: be it grill, simmer, steam, boil, or raw.

We hope that through the dining experience at our restaurant, our customers may re-discover the natural flavors of the ingredients; enjoying the beauty, simplicity, and harmony with nature.
